Frank J. Spalitta and Richard Willams established S & W in 1978. The business started small with the warehouse, coolers, freezers and office space totaling only 5,000 square feet.
In 1985, Frank and Rosemary's son, Paul, joined the company, adding his expertise and determination to strengthen the company even further. Because of this rapid growth, it was necessary for S&W to expand its facilities seven times. S&W's warehouse, coolers, freezers and office space now totals almost 100,000 square feet.
S & W currently services restaurants, and multi-unit franchises throughout southeast Louisiana and parts of the Mississippi Gulf coast. We have two locations. Our main warehouse is located in Hammond in its original location. After acquiring DiVincinti Brothers in 2006, we felt it was important to continue to have a location in Baton Rouge as well

Our catfish are grown within a 40 mile radius of our plant. Most of the ponds have limerock beds which, in many peoples opinion, produce an extra sweet, fine tasting fish. Our farmers do an outstanding job of pond management to produce a safe product for the consumer U.S. Farm Raised Catfish Although Captain Frank's has grown, we still work hard to maintain the same level of quality control, on-flavor screening, cleanliness, and “second mile customer service” that we have come to be known by.
